PB& J Peanut Butter Cookie with Strawberry jam Ice Cream

Yields4 Servings
 4 Packs Fat Snax Peanut Butter Cookies
  cup Heavy Whipping Cream
 2 ½ tsp Xylitol
 3 drops liquid Sucralose or 5 drops liquid Stevia/Monkfruit
 Xanthan Gum
 Guar Gum
 4 tbsp Nature's Hollow Strawberry Jam

1. In a medium bowl or blender, combine all ingredients except cookies and jam.
2. Using a hand mixer, electric whisk, or blender on low, mix until stiff peaks form.
3. Add jam and mix until combined.
4. On baking tray or plate, arrange four bottom cookies.
5. Spoon a heaping portion of cream onto each bottom cookie and gently cover with a top cookie.
6. Freeze for 20-30 minutes.
7. Serve and Enjoy!
