Low Carb Instant Pot Chicken Zoodle Soup

Yields1 Serving

 3 Stalks Celery, Diced
 2 tbsp Diced pickled jalpeno
 1 cup Bok Choy, sliced into strips
 ½ cup Fresh Spinach
 3 Zucchini, spiralized
 1 tbsp Coconut Oil
 ¼ Onion, diced
 ¼ cup Button Mushroom, diced
 2 cups Cooked Chicken, diced
 3 cups Chicken Broth
 1 Bay Leaf
 1 tsp Salt
 ½ tsp Garlic Powder
  tsp Cayenne Pepper

1. In a bowl, place spinach, bok choy, and jalapeno.
2. Place spiralized zucchini in another bowl.
3. Press sauce and add the oil
4. Add onion and mushrooms to the hot oil and saute until onion is translucent, about 4 to 6 minutes
5. Add spinach, bok choy, and jalpenos to the Instant Pot
6. Cook for 4 minutes and press Cancel.
7. Add broth, bay leaf, diced chicken, and seasoning to the Instant Pot.
8. Close the lid and press Soup. Cook 20 minutes
9. Do a natural release.
10. Add spiralized zucchini on keep warm mode and cook for 10 minutes.
11. Serve
