Buffalo Low Carb Chicken Soup

 2 tbsp diced onion
 2 tbsp butter
 3 cups chicken broth
 2 boneless skinless chicken breast
 1 tsp salt
 ¼ tsp garlic powder
 2 stalks celery chopped
 ½ cup hot sauce
 4 oz cream cheese
 ½ cup shredded cheddar cheese
 ¼ tbsp Xanthan gum

1. Melt butter on Saute in the Instant Pot
2. Add onion and saute for 2 to 3 minutes. Press Cancel
3. Sprinkle the chicken with pepper, garlic powder, and salt.
4. Add the chicken and broth to the Instant Pot.
5. Add hot sauce and celery.
6. Place cream cheese on top of the chicken.
7. Close and press Manual.
8. Cook 25 minutes.
9. Do a quick release and open.
10. Add xanthan gum and cheddar.
